A classic from the Southern United States, cornbread is a quick bread that can range from savory to sweet. This recipe yields a moist, tender crumb, perfect for serving alongside chili or barbecue.
Ingredients:
- 1 cup yellow maize meal
- 1 cup all-purpose flour
- ¼ cup granulated sugar
- 1 tbsp baking powder
- ½ tsp salt
- 1 cup buttermilk (or milk)
- 1 large egg
- ¼ cup melted unsalted butter
Instructions:
- Preheat your oven to 200°C (400°F). Grease an 8-inch square baking pan or a cast-iron skillet.
- In a large bowl, whisk together the maize meal, flour, sugar, baking powder, and salt.
- In a separate medium bowl, whisk together the buttermilk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Pour the batter into the prepared pan or skillet.
