Incorporate maize meal into your pancake batter for a delightful texture and a subtle, sweet corn flavor. These pancakes are heartier than their traditional flour counterparts and are wonderfully satisfying.
Ingredients:
- ¾ cup all-purpose flour
- ½ cup maize meal
- 2 tbsp sugar
- 2 tsp baking powder
- ½ tsp salt
- 1 cup milk
- 1 large egg
- 2 tbsp melted butter
Instructions:
- In a large bowl, whisk together the flour, maize meal, sugar, baking powder, and salt.
- In a separate bowl, whisk the milk and egg together, then stir in the melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just moist. Do not overmix.
- Let the batter rest for 5-10 minutes.
- Heat a lightly oiled griddle or frying pan over medium-high heat.
- Pour or scoop the batter onto the griddle, using approximately ¼ cup for each pancake.
- Cook until bubbles appear on the surface, about 2-3 minutes. Flip and cook until the other side is golden brown.
- Serve immediately with butter, maple syrup, or fresh fruit.
